Hand trimmed. Lightly seasoned. Cooked low and slow at 185 degrees, bathed in hickory smoke. We’ve been doing it this way since 2010, and we’re not about to stop now.

◆ The Food

From scratch isn’t a
buzzword here.
It’s an obsession.

Our pits run overnight. Briskets, pork shoulders, baby back ribs, all hand trimmed and seasoned, then smoked for 14 hours over real hickory. No shortcuts. No liquid smoke. No holding ovens full of yesterday’s food.

Lori’s mac and cheese. Grandma’s pecan pie. Pit beans with bits of brisket, smoked for eight hours. The coleslaw that people genuinely argue about. We make our own stocks, sauces, and dressings. We work with local bakers for our bread.

Not hip, stylish or trendy. Just good food made from scratch.

◆ Our Story

A couple of culinary nerds who fell in love over food.

We’re Steve and Lori Popp. I entered this business when I was 14. Lori came to it as a second career. We became best friends over food, got married for many reasons, and decided we were both crazy enough to open a restaurant together.

After months of renovations with family and friends, we opened the doors on March 18th, 2010. The plan was simple: cook the comfort food that made us happy, the way it was meant to be made. From scratch. Every day.

Fifteen years later, we’re still here. Still cooking. Still married, somehow.

◆ Family

Mom and Dad gave up retirement for this place.

When things got real, my parents Linda and Stan were commuting from Sarnia to Hamilton every weekend to help. When we hit big, they gave up their retirement, moved to Grimsby, and ran the front of house while Lori and I ran the kitchen.

Over 1,000 people wrote to Food Network about us. We didn’t apply. The community nominated us. There were days we’d serve 700 guests in a 67-seat dining room. Ten complete turns. Those were some crazy fun times doing things that now seem superhuman to me.

The kids’ names are on the menu. Bizzy’s Mac n’ Cheese. Spenny’s Choice Cheeseburger. This isn’t a brand. It’s our family.
