How many people are you feeding? That’s it. Once you know that, the rest practically builds itself. We’ve put together thousands of events — here’s what works.

The secret to a
great spread.

Be generous on the sides. Everyone goes back for seconds on the mac and cheese. The hosts who look like heroes? They ordered one extra round. That’s the move.

◆ Timing

A little heads up
goes a long way.

48 hours is the sweet spot. Our smoker runs at 185°F for 12+ hours — that’s what makes the brisket what it is. A couple days’ notice lets us get everything dialled in for you.

Feeding more than 40? A few extra days is ideal. Peak season (May–September), a week ahead guarantees you get exactly what you’re after.

We’re open Wednesday through Sunday — plenty of pickup windows to fit your schedule.

1091 Highway 8, Winona, Ontario — right off the QEW at the Hamilton/Niagara border. Pickup starts at 11:30am. Easy to find, and everything is packed to travel beautifully.

◆ What You Get

Everything you need
to be the hero.

Your order arrives packed, portioned, and ready to serve — sauces included, with a serving guide so everything hits the table exactly right.

You set the table. Grab some plates, cutlery, napkins — and if you’re feeling fancy, a set of chafing dishes. That’s the fun part.

We spend 15 hours at the smoker. You spend 15 minutes setting up. Your guests spend all night talking about it.

◆ Pro Tip

For groups over 20 — chafing dishes are a game changer. Even the disposable ones from Amazon work beautifully. Everything stays hot, you stay relaxed, and your guests think you hired a caterer.

◆ The Golden Hour

Serving is the
easy part.

Picked up within 30 minutes? Open it up and let people eat. It’s perfect.

Got a bit of time before serving? Keep everything covered and warm. It holds beautifully for up to 90 minutes.

Need to reheat? We’ve got you. Brisket — loosely foil, splash of broth, 300°F. Pulled pork — stovetop, low heat, touch of moisture. Ribs — foil, 300°F, 10–15 minutes. Comes right back to life.
