Start with one number.
How many people are you feeding? That’s it. Once you know that, the rest practically builds itself. We’ve put together thousands of events — here’s what works.
And always round up. Real smoke does things to an appetite.
◆ Timing
A little heads up
goes a long way.
48 hours is the sweet spot. Our smoker runs at 185°F for 12+ hours — that’s what makes the brisket what it is. A couple days’ notice lets us get everything dialled in for you.
Feeding more than 40? A few extra days is ideal. Peak season (May–September), a week ahead guarantees you get exactly what you’re after.
We’re open Wednesday through Sunday — plenty of pickup windows to fit your schedule.

Your order arrives packed, portioned, and ready to serve — sauces included, with a serving guide so everything hits the table exactly right.
You set the table. Grab some plates, cutlery, napkins — and if you’re feeling fancy, a set of chafing dishes. That’s the fun part.
We spend 15 hours at the smoker. You spend 15 minutes setting up. Your guests spend all night talking about it.
◆ Pro Tip
For groups over 20 — chafing dishes are a game changer. Even the disposable ones from Amazon work beautifully. Everything stays hot, you stay relaxed, and your guests think you hired a caterer.
